Sticky Date Cake
Vegan, very quick and easy to make, tastes great! Kind of like 'pudding cake'.

2 cups dates or raisins
1/2 cup oil

1/2 cup palm sugar or brown sugar
3 tbs cocoa
2 cups flour

2 cups water
1 tsp bicarb soda
1/4 cup optional rum (or to taste)

In a large saucepan place the dates (or raisins), oil, sugar, cocoa and water. Bring to the boil and simmer until the sugar has dissolved. Take off the heat and allow to sit for a minute before adding the bicarb soda. Stir well and the mix will froth. Allow to cool and then add the flour (and rum if you want), stirring it through until well mixed. Don't worry about the pastey consistency! Place in an oiled cake tin or dish, smoothing the top with a spoon. Cook for 35-40 minutes. Note that this cake doesn't rise, and the skewer test won't work because it is very moist.
