Golden Oat Cookies
Vegan, recipe from Kathleen, makes 24-36

1 cup rolled oats
2 cups wholewheat flour + 1 tsp baking powder
1 cup raw sugar
1/3 cup olive oil

1 cup water
1/4 cup golden syrup
OPTIONAL - sesame seeds, vegan choc-chips, dried fruit, jam, chopped nuts to taste
(if you use these you may need slightly more liquid)

1. Preheat oven to 180 degrees C (fanforced, or 200 degrees C (conventional). Grease two trays (for large cookies) or three trays (for smaller cookies) with vegan margarine.

2. Combine oats, flour, baking powder and sugar in a large bowl. Mix in oil, golden syrup and half the water until just combined. Add any optional ingredients if you wish. Gradually stir in the rest of the water until you get a doughy consistency.

3. Shape in cookies and bake for 17 minutes or until golden. Enjoy!
