Beetroot Dip

Beetroots
Yoghurt
Mint
Salt
Pepper

Cook 2-3 beetroots. Roasting them with olive oil in the oven is the best, but you can also boil them up or steam them. Put them in a blender with a whole bunch of mint, a small tub of yoghurt (or just keep adding until it is how you like it), and salt and pepper to taste!

This dip is also great using parsley and other herbs instead of mint.

Grate some beetroot and add salt, pepper, olive oil and lemon juice for a tasty side salad. If you want to get decadent use melted butter instead of oil. Mmm....
